Infinifolders has been updated for iOS 5 and made available for download on Cydia. Chpwn wrote earlier:

Infinifolders allows you to:
- add as many icons as you want to each folder
- scroll vertically as well as horizontally, to access hidden icons
- multiple personal settings options, and
- keeps your icon setup safe
